What’s stirring in my pot? Italian Sausage, White Bean and Spinach Soup


My family is so spoiled and they are always asking for me to make this or that for dinner because they get bored of my tried and true recipes.  I decided to have a night devoted to soups this year or at least every other week because I know my family will say soup again?

I love this soup! It is Quick and Easy. It makes a lovely dinner when accompanied by a salad and fresh baguette. I’ve added my modification but the original recipe comes from Fresh and Fast by Marie Simmons.

1/2  pound italian sweet or hot pork or turkey sausage, casing removed

1/2 cup chopped onion

garlic clove, finely chopped

1 tablespoon of extra virgin olive oil

31/2-4 cups canned (2 cans) or cooked dried cannellini beans

3 cups homemade chicken broth ( I use the organic chicken broth from the box)

1 cup chopped fresh or drained canned tomatoes

1 10 0z. package fresh spinach (I have used frozen in a pinch) rinsed, trimmed and torn

Grated Parmigiano-Reggiano.

  1. Crumble the sausage into a nonstick skillet and cook, stirring until brown about 5 min. Reserve sausage to dish after draining.
  2. Combine the onion, garlic and oil in a large saucepan. Cook , stirring, over low heat until the onion is soft. Stir in the beans,  broth, tomatoes and reserved sausage. Heat stirring until very hot.  Add the spinach. Cover and cook until the greens are wilted and tender, about 5 minutes.
  3. To serve, ladle into bowls and sprinkle each with some cheese. The parmesean chese really makes this soup sing.
